*Pick up orders are available next day for pick upLocated in the heart of the Côte des Bar in southern Champagne, Vincent Couche is a card-carrying member of the Grower Renaissance. Obsessed with the health of his vineyards and the terroir driven character of his wines, he lovingly farms 13 hectares of vines in Buxeuil Vincent and Montgueux. Working primarily with Pinot Noir and smaller amounts of Chardonnay, his wines are naturally fermented and aged in oak barrels. Dosage levels are low, if not nonexistent. In contrast to the standardization of larger wineries, Vincent allows himself to color outside of the box when warranted. For example, the Rosé Désir is made from 80% Pinot Noir (plus 20% Chardonnay) that underwent carbonic maceration before being “bled off” the skins. Finished in oak vats and barrels, the resulting rosé is driven by lifted savory red fruit aromas and mouth filling texture. With only 5 g/l of dosage, the finish is decidedly dry with moreish spice.
