Owned by 5th generation winemaker Gérard Tremblay, this domaine has around 40 hectares of vineyards. This includes 12 hectares of prime Premier Cru and Grand Cru sites. The 2018 Chablis Vieilles Vigne is made from grapes harvested from sustainably (“lutte raisonnée”) tended vines. The grapes were pressed slowly to avoid extracting any green tannins from the skins. Fermented slowly in temperature controlled tanks, the wine was aged for a short spell in used oak barrels. This small amount of barrel influence doesn’t flavour the wine, but rather adds texture and complexity. Straw yellow in colour with medium body, this wine shows lean notes of green apples, pears, and ripe citrus fruits.
