"Here is our spacetime traveling, swashbuckling, entry level amber wine, back again in a whole new guise. While the grape varieties continue to change, the basic elevage of this wine has stayed relatively constant. In this second installment of Bifrost we co-fermented and destemmed whole berries of Pinot Blanc and Gewürztraminer, fermented in stainless steel, and had a short maturation time in older oak. This is a return to a more elegant, light, and crushable style for our entry level amber wine. 

To accomplish this we picked each variety at a very different ripeness for specific qualities. The Pinot Blanc was picked early at the same time as our sparkling wine pick to give great acidity and lighter tannins. The Gewürztraminer was left hanging to get as ripe as the vintage would permit and provide beautiful aromatics, more developed tannins, and deeper colour.

This co-ferment of roughly two thirds Pinot Blanc (65%) and one third Gewürztraminer (35%) was bottled in March 2023, unfined and unfiltered." - Rigour & Whimsy
