His 30 hectares are organically tended, and his low-intervention winemaking reflects a commitment to purity and expression. A founding member of the natural wine movement, he’s also influenced a new generation of growers.
A blend of Carignan (30%), Grenache, Syrah, and Counoise (20% each), with 10% Mourvèdre, sourced from four plots: Garrigues, Carré, Canarde, and Truffière. The vines, around 30 years old, grow in red clay soils scattered with large stones and endure hot, dry conditions.
Mostly destemmed (with Carignan often left whole-cluster), the grapes undergo a short maceration with minimal extraction. The wine is aged for eight months in concrete, then bottled unfined and unfiltered.
