The family's roots in village of Cumières go back to the 17th century. The bulk of their vines, 11 hectares, are located here. The remaining holdings are in Damery, Hautvillers, and Fleury-la-Riviere . Like many Champenoise they previously sold their fruit to larger houses, only starting to bottle their own wines in the 1950’s. In 2008 they decided to move their winemaking operations to the village of Aÿ. Sustainably farmed plots are planted to 42% pinot noir, 39% pinot meunier, and 19% chardonnay. Average vine age is 20 years, with the oldest being planted in 1926. This part of Champagne, known as the Grande Vallée de la Marne, produces exceptional pinot noir from south facing vines. In the winery Baptiste uses the traditional squat Coquard press for gentle extraction and avoids malolactic fermentation to maintain acidity and ageing potential. Bottles are matured in chalk cellars for 3 - 8 years.
