How to achieve this? In their own words: “You don’t need smoke and mirrors to make great wine. You need good earth, good air, good weather, good fruit and good people.” With separate wineries in Stellenbosch and Elgin, Dale and Radford are able to make site expressive wines at what we feel are very good prices.
Using grapes from 3 maritime influenced vineyards in the Polkadraai Hills, Dale and Radford wanted to make a Chardonnay with telltale minerality and tension from naturally high acidity. Hand harvested at dawn, the grapes were whole-bunch pressed into barrels ranging in size and age - 2500L foudre of Austrian origin plus 228L and 300L barrels from Burgundian cooperages. Following natural fermentation the wine rested 9 months on the lees.
Alex Dale spent many years living in Burgundy. He even opened a wine bar in Beaune. That Burgundian DNA is clearly found in this wine. Pale gold in color, on the nose aromas of lemon curd and green apple are complemented by hints of brioche and spice. The medium bodied palate is taught with lifted minerality. This is a beautifully balanced South African Chardonnay.
