Domaine Patrick Javillier is one of the most representative white winemakers in the village of Meursault. Patrick Javillier believes that aging on the lees is essential to the development of the wine in the bottle. Most of their wines spend one year in oak barrels before further maturation in tanks on their fine lees while the Corton-Charlemagne Grand Cru spends a second winter in wood. This family domain covers 11-hectare vineyards located in the villages of Meursault, Puligny-Montrachet, Savigny-Les-Beaune and Aloxe-Corton, all of which belong to Côte de Beaune and range from regional appellations to Grand Cru level. They produce mainly white wines from the Chardonnay grape with a small portion of red from Pinot Noir. Javillier’s winemaking methods allow the wines to fully express the diversity of their extraordinary terroir. Javillier says that he makes wines that can be consumed early but also with great ageing potential. Like Jancis Robinson once said: “Every vintage, it is the name of Patrick Javillier that I first look for.”
