Jean-Marc manages the winery operations, while his brother Eric is the oenologist. Their father, Jean-Jacques is a viticulturist and leads the team in the vineyards. In 2016, Jean-Marc’s son Antoine joined his grandfather Jean-Jacques, and will one day take the helm of the viticulture at Pardon et Fils.
Since the inception of Pardon et Fils, viticulture has been sustainable. Everything, including harvest, is performed manually. The vines are trained in the traditional way for Beaujolais: very low to the ground, goblet style, and therefore require constant diligence. In the winery, Eric favours minimal intervention, preferring spontaneous fermentations, as he believes it is the best way for the individual ‘cru’ to express themselves. The wines are subjected to a long, slow, cool élévage to gain complexity, and are bottled with minimal handling.
This Beaujolais Cru is made from Gamay grapes harvested from vines planted to granite, clay and shale soils.
