Then, very carefully, the golden whisky is drawn and blended. Still not done, it is then aged for a further 6 months in sherry barrels to finally create a smooth, luxurious depth of flavour rich in oak, spices, and a light fruit sweetness captured at 90 proof (45% alcohol)." - Highwood Distillers
