Nikolas has spent his life in wine. Born into a family of winemakers, he studied oenology, worked in several wineries, and later collaborated with Simonit & Sirch, gaining deep experience in vine training across Europe and beyond.

In 2018, he began producing his own wines using his family’s grapes. Based in a small winery near his home in Cormons, Collio Friulano, he now crafts artisanal, traditional wines from fruit that was once sold off. His parents, Elena and Robert, help in the vineyards, while all cellar decisions are his. The family’s plots lie in Cormons, in the Montona, Pradis, and Bosc di Sot “crus.”

Mainly Pinot Grigio with some Chardonnay and Malvasia Istriana, this wine comes from an old family vineyard in San Floriano del Collio (‘Steverjan’ in Slovenian). Planted in the 1960s–70s, the mixed varieties grow together on terraced plots dotted with fruit trees and bordered by woods. The grapes are vinified together with maceration, then fermented and aged in cement, steel, and barriques for about 11 months, followed by 6 months in bottle.
