Viña Mayu was established in 2005 and is based in the Elqui Valley in northern Chile. Mayu is an ancient Incan name for the milky way, literally translating to "river of stars". This unique white is made from the Pedro Ximenez grape (PX for short), best known for making lusciously sweet Sherry wines in the south of Spain. In this case, PX is used to create a crisp and refreshing white wine that delivers excellent value.

The grapes for the Mayu Pedro Ximenez are harvested by hand, and the wine is fermented and aged in stainless steel tanks to preserve freshness. This is a great everyday white and a perfect option if you want to pour something unique for your wine geek friends without breaking the bank. Look for notes of bright citrus fruit, green apple and spring flowers. The Mayu Pedro Ximenez would be a great pairing for sushi or for Sunday afternoon football on the couch.
