He then sold everything he had to move back to France and dedicate his life to farming and making wine in the Loire Valley. You’ll find his stupendously rare cuvées at legendary restaurants like Contra in New York, La Buvette in Paris, and Night + Market in LA. The grapes for this new cuvée are grown by Julien Moreau of Domaine de Cambalu. This ten year old plot is located next to Le Cher, a tributary of the Loire just east of Tours, on clay-limestone. This wine is made from Chenin Blanc, direct pressed into amphora for fermentation and élevage. 10ppm of SO2 was added at bottling. 5g/L RS
This wine is pale gold in the glass. The nose is honeyed, seen through sepia toned glasses. You’ll find aromas of chamomile, dried yellow apple, macadamia nut, oolong tea, chrysanthemum, and peach. The palate is sumptuous, rich and expansive. All of this is perfectly balanced by a perky acidity that almost twangs. The finish offers flavours of pumpkin seed, sweet corn, yellow plum, honeysuckle, and birch.
