Esteban traversed the state in search of the best producers in each region. Every one of these Raicilla expressions is unique; created by different Maestro Taberneros in distinct regions, from different species of agave using diverse techniques, the individual results are astounding.
The Los Gigantes Raicilla is produced from an 880-kg Americana agave plant, which was roasted in an adobe oven over black oak wood. After grinding and mixing with water, the aguamiel ferments with wild yeasts in oak vats, then is distilled in a single pot just once to retain as much character of the roasted agave as possible.
