Koch’s Espadín comes from San Baltazar Guelavila in Oaxaca, where copper-pot distillation shapes this artisanal mezcal. Sweet smoke, ripe fruit and fresh herbs give way to cooked pineapple and gentle spice. A useful introduction to the way place and craft show up in agave spirits.
