Having founded his winery in 1985, Jolivet today tends 16 hectares of vines mostly in the prestigious appellations of Sancerre and Pouilly Fume. This area is home to France’s most esteemed Sauvignon Blanc wines.
A proponent of natural techniques, Pascal ferments his wine using natural yeasts. Pale straw in colour, this Sauvignon Blanc has grassy aromas of citrus fruits and wet stone. Light bodied, the acidic palate has flavours of lemons and gooseberries.
