Made with grapes from Yamagata and Yamanashi prefectures. All grapes are destemmed and fermented in amphorae using various winemaking methods. Bottled after approximately 8 months of amphora aging. All fermentation is spontaneous using wild yeast. Unfined, unfiltered, and contains no antioxidants or other additives.

The aroma has the sweetness of table grapes, with a complex impression of raspberry compote, clove, and black tea. The taste is juicy with a fresh acidity, but also has a mellow astringency and dry finish derived from amphora aging.
