Located between between Nîmes and Montpellier in the heart of Languedoc-Roussillon region is Château Grès Saint Paul. Built on the site of a small medieval church, the winery has been owned by the Serviere family since 1830. The 24 hectares of vineyards are planted to gravelly and pebbly soils on a plateau that has a cool microclimate. During the hot summer months, this cool climate allows the grapes to maintain their acidity.
The Château Grès Saint Paul Grange Phillipe Viognier was made from grapes that were destemmed, softly pneumatic pressed, and cool fermented. It was aged in stainless steel tanks with a stirring of the fine lees.
