The Head Sommelier of El Bulli between 2007 and 2011 (the holder of three Michelin stars and the world's number one restaurant until its closure in 2011), Seijas founded Gallina De Piel in 2017. Working with local growers, the project includes wines from the northern Spanish regions of Catalonia, Aragon and Galicia. With the Pinkgall Seijas explores the three shades of Garnacha - Garnacha Tinta (red), Garnacha Roya (gray), and Garnacha Blanca (white). Delicately coral pink from 3 hours of skin maceration, the palate conjures refreshingly dry notes of strawberry, pink raspberry, yuzu citrus and lavender.
