"Grapes are planted on rolling hills in Hog Canyon in the northern area of Paso Robles. The grapes are destemmed (no whole clusters) at the winery. Fermentation occurs in stainless steel tanks. The grapes are pressed at dryness. Malolactic fermentation completes after pressing." - Bob Varner
