Something of a living legend, Philippe tends to 12 hectares of vineyards in the northeastern sector of Vouvray. His plots of vines, the two main ones being “les Perruches” and “les Ruettes”, are farmed according to organic principles. The grapes are hand harvested meticulously in several “tries”, or passes, harvesting each portion of the vineyard at its optimal ripeness. Ageing of still wines is done in well maintained old wooden 300 liter barrels. The overall house style focuses on crystalline clarity and supreme age-ability.
Foreau never chapitalizes his wines; demi-sec and moelleux cuvées are only made in years when the grapes naturally reach a high degree of ripeness. When a Demi-Sec is released by the domaine, it can carry somewhere between 8 and 20 g/l of residual sugar but, more often than not, a Foreau Demi-Sec will be at the 8 to 12 g/l/
