But he has his own side project called DENAVOLO from which he produces white wines - or perhaps more correctly 'orange' wines. They are wines made from mostly local varieties: Malvasia di Candia, Ortugo, Marsanne, Sauvignon Blanc, and some unknown local varieties, that are left with some length of skin contact.
Denavolo Dinavolo is Giolio's most serious wine. From older vines, it sees 6-7 month of skin contact and extended bottle ageing. It's concentrated, baritone, tannic and its flavours are more connected to the earth than the fruit. A really compelling wine.
