The ‘Tiamat’ is a great example of why Oltrepò Pavese is regarded as the Pinot Noir capital of Italy. The wine is crafted from grapes harvested across nine parcels surrounding the winery. Following cold maceration, the fruit underwent partial whole-cluster fermentation in stainless steel tanks, with daily pumpovers to encourage gentle extraction. Each parcel was fermented and aged separately, using a combination of stainless steel tanks and barriques, before being brought together for bottling. Pale ruby in color and light-bodied, the ‘Tiamat’ is youthful and expressive, with notes of Bing cherry, mulberry, forest floor, and chanterelle.
