The middle point between Amarone and standard Valpolicella, a Ripasso is a "baby Amarone" of sorts. To produce this wine the winemaker will "re-pass" the re-fermenting standard Valpolicella over the leftover skins from the Amarone production. The technique adds texture, complexity and concentration. Lush and ripe with dried morello cherry and liquorice notes, this is the perfect pairing for pizza.
