This collaboration of grape growers brings together around 900 hectares of vineyards located near the villages of Toro, Villabuena del Puente, El Pego, Villavendimio, Tagarabuena, San Roman, Peleagonzalo and Villafranca. Primarily planted to Tinta de Toro, these are some of the oldest vineyards in the region and are farmed according to aspects of organic principles. Most of the vines are old, gnarled, unirrigated and bush trained and the grapes hand harvested. In terms of wine output, Bodegas Covitoro is the second largest producer in Toro.
Deep violet red in the glass, the Covitoro El Bos Roble is jam-packed with blackfruit and baking spice aromas. The nose conjures memories of right out of the oven blueberry and blackberry pie dusted with cinnamon. On the palate it is medium bodied with silky smooth tannins and soft acidity. The finish is juicy with a touch of vanilla sweetness. A very approachable style of Tinta de Toro, it’s a great match for tender, fall of the bone, smoked sweet ribs.
