His first foray into distillation was making aguardiente on a coffee farm. Aguardiente is a distillate made from sugarcane and is highly aromatic, with notes of anise, coconut, vanilla, and herbs. Soon he ventured out on his own, distilling in a still that be made and designed entirely on his own. His son soon took over the operation and improved upon his still design which led to an increase in aguardiente production. As word began to spread about the quality of the rums made by the Krassel Peralta family, folks from all over Mexico began flocking en masse to try them for themselves. Without the proper infrastructure to get consumers to the distillery, family members began to literally mule the aguardiente to communities far and near, sometimes traveling for weeks at a time with mules loaded with 40-liter jugs of aguardiente.
The town now thankfully has a road in and out so that tourists can access the distillery, however before they were implemented, the second generation of the Krassel Peralta family took it upon themselves to learn to fly small planes with the idea that if they couldn’t get folks in to taste their rums, they would get the rums out to the people!
Nowadays, they harvest their own organic sugar cane and use handmade stills inspired by their grandfather’s invention. Their rums are a little more on the rustic side, perfect for the nerds who love a Rum Agricole, or Haitian Benevolence Clairin.
