The Rebel Pét-Nat is produced from 100% Vernaccia grapes, a grape known for its lemon, almond and underripe pear notes. Pét-nat, petillant naturel, is an ancient technique for making sparkling wine that has captured the modern drinker’s attention with its frothy charm, light and airy bubbles, and whimsical flavour profiles. This wine is made using no technical interventions or manipulations; nature is allowed to take its course. As fermentation continues in bottle, CO2, a byproduct of fermentation, is trapped in the sealed bottle, creating that delectable frothy characteristic we love in a Pét-nat. We are left with a wine that is delicate with fruit driven aromas of pear, nectarine, and Meyer lemon. On the palate, citrusy acidity adds refreshment and zip. This wine is playful; King Kong isn’t your typical Tuscan character, but for Fattoria Amo he finds peace in their idyllic country estate.
