Didier Gimonnet holds 28 hectares of vines predominantly in the Côte de Blancs. The winery is in the premier cru village of Cuis where Didier’s family has been growing grapes since 1750. 70% of their vines are over 30 years old, of which 40% are over 40 years old (some over 100+ years old). 98% of their holdings are planted to Chardonnay. The 1er Cru Blanc de Blancs is made of Chardonnay from sites in Cuis. Blended reserve wines are from magnum. After being aged sur latte 30+ months, a dosage of 6.5 g/l is added.
