*Pick up orders are available next day for pick upThis wine is crafted by the the Roman Catholic Sisters of the Order of Cistercians of the Strict Observance, under the guidance of Giampiero Bea. Located 90 minutes north of Rome, eighty nuns organically work vineyards, orchards, and gardens. They organically till the soil, allow a cover crop to grow, hand prune the vines, and use no chemical treatments.
The Coenobium is a blend of Trebbiano, Malvasia, and Verdicchio. The grapes were harvested together and co-fermented without added yeasts. Ageing was done on the fine lees in steel and fiberglass tanks.
