Ranging from bone dry and salty, to very sweet and raisiny, there are many types to discover. An Oloroso (meaning “scented” in Spanish) is made by extended ageing in barrels. Unlike a Fino which ages under flor, and Oloroso is exposed to oxygen, and develops a dark hue and nutty aromas. Aged for an average of 12 years, the Don Nuño from Bodegas Lustau (founded in 1896 by Don José Ruiz-Berdejo) shows notes of dried apricots, walnuts, baking spice, dark chocolate and toffee. Intensely fragrant, on the palate it has nervy acidity and a dry finish. This wine is an umami bomb! Chilled slightly in the fridge, it is the perfect match for decadent Iberico ham.
