Meaning “copper” in Italian, a “ramato” wine is made by macerating Pinot Grigio grape juice or “must” with its skins. The skins’ pink hue give the wines color from a semi-pale pink to dark orange, depending on maceration time. Other than the added colour, the wine has drawn out all of the grapes aroma and flavour compounds. For this wine, the juice was fermented with the skins and with their indigenous yeasts at low temperature (12- 14°C) in stainless steel tanks, for about 30 days. In the glass it is bright copper-orange in color. The nose shows vibrant tropical and floral aromas. On the palate it has refreshing flavours of dried peaches and apricots, culminating in a dry and herbal finish. It is reminiscent of an Aperol-spritz, without the spritz.
