"The single-vineyard 2019 Hacienda Las Cañas comes from a plot in the lower part of the property planted with ancient vines (they reckon 100 to 200 years old!) at 380 to 400 meters in altitude, with Listán Negro pruned in the traditional cordón trenzado. It fermented with 20% full clusters in concrete with indigenous yeasts and without temperature control (a constant here). It matured in second-use 2,500-liter oak foudre and used 500-liter oak barrels for 12 months. I was very surprised by the Burgundian nose of the wine, and Jonatan García explained that this wine matured in a Rousseau foudre (instead of Stockinger), which might give it a sweeter touch with the sour cherries and flowers that jumped from the glass. This was surprisingly good too! 4,000 bottles were produced. It was bottled in August 2021." - Robert Parker's Wine Advocate
