The vines, around 30 years old, grow in red clay soils scattered with large stones and endure hot, dry conditions.\u003c\/p\u003e\n\u003cp\u003eMostly destemmed (with Carignan often left whole-cluster), the grapes undergo a short maceration with minimal extraction.
