You need good earth, good air, good weather, good fruit and good people.” For the Vinum Pinot Noir, Alex and Ben harvested fruit from three sites in Stellenbosch and Botriver, picking the grapes early to retain acidity and balance. Natural whole berry fermentation and aging in 228L and 300L French oak barrels led to a wine that’s medium ruby red in color, with aromas of just picked cherry, wild raspberry, mushroom, clove and forest floor.
