

Coenobium White

These weird and wacky whites are perfect for those looking for something off the beaten path. These include wines from unique grape varieties and regions, unfiltered / cloudy whites, orange wines and much more. Each bottle is an adventure in itself!

This wine is crafted by the the Roman Catholic Sisters of the Order of Cistercians of the Strict Observance, under the guidance of Giampiero Bea. Located 90 minutes north of Rome, eighty nuns organically work vineyards, orchards, and gardens. They organically till the soil, allow a cover crop to grow, hand prune the vines, and use no chemical treatments.
The Coenobium is a blend of Trebbiano, Malvasia, and Verdicchio. The grapes were harvested together and co-fermented without added yeasts. Ageing was done on the fine lees in steel and fiberglass tanks.
