Owned by the same family for 350 years, this Austrian winery has been managed by Johannes Zillinger since 2013. Johannes learnt his craft from his father, a pioneering grape grower who converted his vineyards to organic farming back in 1983. When Johannes became the winemaker he went a step further and moved to biodynamic farming practices, gaining Demeter certification. His estate, which spans 18 hectares, is located within the Niederösterreich wine region. Every year he produces a meager 8300 cases of wine.
The Zillinger Revolution White is made from a unique cuvée of 3 grape varieties – Chardonnay (50%), Riesling (25%) and Sämling (25%). The Chardonnay was fermented in amphora, The Sämling in barrels and the Riesling was made with a unique solera system of multiple vintages. Exceptionally aromatic in the glass, on the nose there are perfumed scents of limes, jasmine, lemongrass and thyme. Crisp and piquant flavours of yellow apples and pears coat the palate. Culminating in a refreshingly dry finish, the Zillinger Revolution White is one of a kind.
