Description
Le Rocher des Violettes was created in 2005 by winemaker Xavier Weisskopf. Educated in Chablis and Beaune and earning his degree in viticulture and oenology, Xavier began his career at Château de Saint Cosme. Working with famed winemaker Louis Barruol, Xavier eventually rose to the rank of chef du cave, making 4 vintages during his tenure. An avid admirer of Chenin Blanc, he relocated to the village of Montlouis-sur-Loire and purchased 9 hectares of vines that were planted before World War 2. Today he farms these old vines according to organic principles.
The Touch-Mitaine is made from Chenin Blanc harvested from a 4 ha parcel of 35+ year old vines planted to clay/silex soils. Three quarters of the wine was fermented in 5-10 year old barrels, with the remainder in large foudre.
