“The Versailles Single Wooden Pot Still is predominately constructed from Greenheart wood with copper in all the right points of contact. We reckon this still is at least 150 years old but, will have been treated to an MOT or two over the years. Nevertheless, we continue to enjoy a unreplicable favour profile as a result. 

The Versailles Single Wooden Pot Still was transferred from the Versailles estate which is located on the other side of the Demerara River to the Enmore estate, before moving to its current home at Diamond Distillery.

Here we can see Pete Holland from The Floating Rum Shack dismayed at the fire underneath the wooden pot still. So dismayed in fact that he seems to have taken leave of his senses and is simultaneously using a chocolate teapot and a glass hammer while playing darts on an inflatable board. Nose: Huge tropical fruit notes: honeydew melon, ripe banana, raisins and figs. There are almond and nutmeg notes in with all the fruit, too.

Taste: Even more fruit – this bouquet just got even more pungent with toasted pineapple, red cherry and coconut. Coffee and chilli chocolate adds depth.

Finish: Medium length and all about those sweet spices.
