Rollin Haute Cote De Beaune Blanc


Domaine Rollin Père et Fils is a fourth generation estate, that was founded by Raymond Rollin in the 1930s.  The estate has been passed down from father to son since then, and is currently headed by the Simon Rollin, who took the reins in 2003. The vines have always been farmed according to organic principles. In the cellar the wines are made with natural yeasts and little new oak.

In the early 1970s, the Rollin family acquired vines in the Hautes-Côtes de Beaune. Although the  vines were planted in 1971, many of the Chardonnay vines were replanted in the early 2000’s with better clones. 
The Domaine Rollin Bourgogne Hautes-Côtes de Beaune is made from Chardonnay hand-harvested from vines planted to poor, limestone dominant soil. The grapes were pressed off their skins and fermented in 400L mature barrels. Malolactic fermentation occured naturally during the winter. In the Spring, the wine was racked off the lees and bottled without fining or filtration.
