Raúl Pérez is the bearded rockstar winemaker of Spanish wine. As a teenager Raúl was already the winemaker at his family’s Bierzo estate, Castro Ventosa. Young Raúl wanted to be a doctor, but he was destined to be the most prolific consultant winemaker in the country. Making wine all over Spain, his heart has always been true to his home in the northwest, with projects in Bierzo, Monterrei, Rías Baixas and Ribeira Sacra. Described as “part artisan and part mad scientist”, his approach to vinify wines by separate plots and terroirs has lead to comparisons with Burgundy. Many think that Pérez has been largely responsible for the rise of Mencía, and we applaud him for it.

This is how the winery describes this unique white wine – “This wine is made with Albariño grapes, from a vineyard more than 50-years old in the town of Dena, in the Rías Baixas. The harvest takes place at the end of September, a time when the grape has a higher sugar level. The extraction is done without any maceration and is fermented with its own yeasts and then transferred to very old 750-litre casks for a year. It is bottled without clarification or filtration… The nose shows aromas of medlar, ripe peach, pear skin with slight hints of bay leaf and ripe golden apple. On the palate it is fresh, encompassing, with certain saline touches and a long acidity. The mixture of both elements shows a citric combination that makes the wine, if possible, even longer.”
