Champagne Pierre Paillard is situated in the town of Bouzy, on the southeastern slopes of the Montagne de Reims. Classified as Grand Cru, the vines of the village enjoy a near perfect south facing exposure. Together with the neighbouring villages of Aÿ and Ambonnay, it’s the source of Champagne’s boldest Pinot Noir. The Paillards have been growing grapes here since 1768, and today own 11 hectares of vines planted to 60% Pinot Noir and 40% Chardonnay. Antoine Paillard and Quentin are the 4th generation of Paillard winemakers. Their 28 parcels are farmed Lutte Raisonnée without fertilizers or chemical treatments. All future plantings are sélection massale from two parcels: Les Maillerettes and Les Mottelettes. 

Les Parcelles is made from 100% Bouzy grapes from 22 different parcels of vines, averaging 30 years in age. This blend is composed of 60% Pinot Noir and 40% Chardonnay, with about 35% reserve wine. Sur-lie ageing occurs for four years in deep 19th century cellars that lie 53 feet underground. Once the wine has been disgorged, it is given a small dosage of 3.5 g/l (extra brut). 

Les Parcelles is a great NV all-rounder, with both fruitiness and verve. Light gold in colour, it shows floral and orchard fruit aromas. The palate is tangy with citrus and chalky minerality. A low dosage makes this refreshing champagne the ideal aperitif for Christmas celebrations.
