Pax Wines takes a holistic approach to making wine. No chemicals are used in the vineyards and everything in the winery is done by hand. Natural yeast ferments the wine and unnecessary intervention is always avoided. Planted in 1944 and dry farmed without chemicals on gravelly volcanic soils, these Chenin Blanc vines have amazing concentration and intensity.
Lazer bright acidity balances this densely flavoured wine. It has notes of luscious honeycomb, juicy stone fruit, and delicate spring blossoms. It has the hallmark waxen quality typical to Chenin Blanc, while still being easy to enjoy.
