Pardon Chardonnay Pays d’Oc

Domaine Pardon et Fils celebrated its 200th anniversary in 2020. It is a true family affair, headed by brothers Jean-Marc and Eric Pardon. Jean-Marc manages the winery operations, while his brother Eric is the oenologist. Their father, Jean-Jacques is a viticulturist and leads the team in the vineyards. In 2016, Jean-Marc’s son Antoine joined his grandfather Jean-Jacques, and will one day take the helm of the viticulture at Pardon et Fils.

Since the inception of Pardon et Fils, viticulture has been sustainable. Everything, including harvest, is performed manually. The vines are trained in the traditional way for Beaujolais: very low to the ground, goblet style, and therefore require constant diligence. In the winery, Eric favours minimal intervention, preferring spontaneous fermentations, as he believes it is the best way for the individual ‘cru’ to express themselves. The wines are subjected to a long, slow, cool élévage to gain complexity, and are bottled with minimal handling.

In order to broaden the winery’s offerings, Jean-Marc and Eric work with a select group of winemakers in other regions. The grapes for this wine came from a vineyard located near Limoux and Carcassonne in the Pays d’Oc. A classic example of Chardonnay, it’s golden yellow in the glass and expresses notes of green apples, peaches, and starfruit. It is a wonderful match for rich and decadent brandade de morue, made from salt cod, olive oil, and usually potatoes.
