“From the vineyard of “Perelles le Haut” in Mâcon La Roche-Vineuse, a southerly-facing, softly sloped site of alluvial Bathonian limestone marl. These vines are over 80-years-old, giving very small yields of beautiful orange-tinged berries. Hand harvested and placed as whole clusters in a small tank for a seven-day carbonic maceration. As the grapes slowly release their juice contact with the skins and stems gives the wine a creamy, grippy palate letting floral and saline notes develop. Pressed to old barrels for a native fermentation and left on gross lies for nine months.” – Le Grappin
