Jean-Francois Bourdy is a 15th generation winemaker in the mountainous Jura region. The family estate was founded sometime between 1475-1500. The estate was certified as biodynamic in 2006. Key to the style of Jura wines is the role of oxygen. As the wine evaporates, the barrels (up to 80 years old) are not topped up, leaving air in contact with the wine. This gives these wines their nutty quality. Jean tops up his wines only once in the first year of ageing.
