Eduardo Torres Acosta Versante Nord Bianco

Born in the Canary Islands, Eduardo Torres Acosta moved to Sicily from in 2012 to work harvest as an intern with Arianna Occhipinti’s cellar. He now splits his time between working at Pasopisciaro and running his own project. He farms 4.6 hectares of vineyards on Etna, divided among eight different plots. Producing his first vintages at Arianna Occhipinti’s winery in Vittoria, he now has a small winery on Etna.
The Versante Nord Bianco is made from a blend of 50% Minella Bianca and other indigenous grapes including Carricante, Catarratto, Inzolia, Coda di Volpe, Grecanico. The grapes are harvested from 6 different parcels on the cooler, north-facing side of Mt. Etna, at an elevation ranging from 550 to 900 meters. The grapes were naturally fermented with only indigenous yeast in concrete tanks with skin maceration for 5 days. Ageing was for 8 months in used oak barrels.
