COS Pithos

COS was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The initials of their last names form the wineries name. COS found fame largely for their non-interventionist techniques and the use of unlined 440-liter clay amphorae sourced from Spain.

The COS Pithos is made from a blend of 60% Nero d’Avola and 40% Frappato harvested from organically farmed estate vineyards in the hamlet of Bastonica in the Vittoria area. Fermented with indigenous yeasts in concrete tanks for 10 to 15 days, it was aged six months in amphorae followed by 2-3 months in concrete tanks. The name of the wine, “Pithos”, comes from the Greek word for amphora. Best served after a short spell decanting, this wine shows complex notes of sun dried cherries, raspberries, and bitter orange peel.
