COS was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The initials of their last names form the wineries name. COS found fame largely for their non-interventionist techniques and the use of unlined 440-liter clay amphorae sourced from Spain.
This red wine is made from 100% organically farmed Frappato di Vittoria. It was spontaneously fermented on the skins and aged in concrete tanks.
