Aquavit is a Scandanavian spirit that might just become your new favourite; distilled from grains or potatoes (similar to vodka and gin) and flavoured with botanicals like caraway seeds, fennel, and dill, it is often seen as the aperitif of the European north. 

Confluence’s take on it is a sincere ode to a more classically styled aquavit. With the traditional notes of caraway, dill, anise and lemon, this locally made spirit is not just for drinking on its own. Try it as the base in a caesar, or throw it in a little jazzy lemonade on a hot summer’s day.
