The history of this domaine goes back to the 1256, when the Knights Templar constructed the Commanderie de Peyrassol. After 55 years, the estate came to be owned by the Knights of Malta, who held it until 1789. More recently Château Peyrassol was purchased by Philippe Austruy, who replanted the vineyards. Today the domaine is 850 hectares in size, of which 92 hectares are planted to vine. Winemaking is overseen by Pierre Guérin and Stéphane Derenoncourt.

This rosé is made from a blend of Cinsault, Syrah, Grenache, and a touch of Mourvedre. The grapes were harvested during the cool temperatures of the night, destemmed and pressed. Vinification and maturation was in stainless steel tanks.
