Coenobium Ruscum
These weird and wacky whites are perfect for those looking for something off the beaten path. These include wines from unique grape varieties and regions, unfiltered / cloudy whites, orange wines and much more. Each bottle is an adventure in itself!
This unique orange wine was created by the sisters of Monastero Suore Cistercensi from grapes hand harvested from their 5 hectares of vines planted in the town of Vitorchiano, in the region of Lazio (about an hour north of Rome). The vines were first planted in 1963, and are entirely managed by the nuns. Farming is organic practices, no chemicals save the common copper-sulfur treatments. In the cellar they have enlisted the assistance of famed natural winemaker, Giampiero Bea.
The Coenobium Ruscum is made from a blend of Trebbiano, Malvasia, and Verdicchio. The grape skins were macerated for 15 days to obtain added flavour and complexity.
